Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt to taste
  • 1 egg lightly beaten
  • 1 cup cold sparkling water
  • Oil for frying vegetable or canola
  • 1 lb white fish fillets cod, haddock, etc.

Instructions
 

  • Pat fish fillets dry with paper towels.
  • Mix flour, cornstarch, and baking powder in a bowl.
  • Add paprika, salt, and garlic powder. Mix well.
  • Pour in cold sparkling water slowly.
  • Add the egg and whisk until smooth.
  • Heat oil to 350°F in a deep pan.
  • Dip each fish fillet into the batter.
  • Gently place into hot oil. Don’t overcrowd pan.
  • Fry each side for 3–4 minutes.
  • Remove and drain on a wire rack.

  1. Use cold sparkling water for a lighter batter.
  2. Don’t overmix; keep the batter airy.
  3. Always preheat oil to correct temperature.
  4. Drain fish on a wire rack, not paper towels.
