Ingredients
  

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 2 cups fresh mushrooms sliced
  • 5 cups fresh spinach leaves washed
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add minced garlic and sauté for 30 seconds.
  • Toss in sliced mushrooms and cook until browned.
  • Add red pepper flakes, if using. Stir well.
  • Add fresh spinach in batches. Stir until wilted.
  • Season with salt and pepper to taste.
  • Drizzle with lemon juice before serving warm.

Notes

  1. Use baby spinach for a tender texture.
  2. Do not overcrowd mushrooms in the pan.
  3. Dry spinach well to avoid sogginess.
  4. Add a dash of soy sauce for umami.
  5. Finish with grated parmesan for extra flavor.
