Ingredients
  

  • 2 lbs fresh collard greens
  • 1 large smoked ham hock
  • 1 chopped yellow onion
  • 4 cloves minced garlic
  • 6 cups chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Wash collard greens in cold water.
  • Remove stems and chop leaves.
  • Heat oil in a large pot.
  • Sauté onions until soft and golden.
  • Add garlic and stir for one minute.
  • Place ham hock into the pot.
  • Pour in chicken broth and bring to boil.
  • Add chopped greens a handful at once.
  • Stir greens gently after each addition.
  • Sprinkle red pepper flakes over greens.
  • Cover and simmer for 1.5 hours.
  • Add vinegar, salt, and pepper.
  • Stir and taste for seasoning.
  • Remove ham hock and shred meat.
  • Return meat to the pot. Serve hot.

  1. Use fresh greens for the best flavor.
  2. Clean greens thoroughly to remove grit.
  3. Simmer low and slow for tenderness.
  4. Add more broth if greens dry out.
